I am always looking for good appetizers for parties or to make for my roommates. I came across this recipe and it turned out so good. It was so easy to make and it requires only 4 ingredients. Even though New Years is tonight, this would make a great addition to the food table, especially because of the little time it actually requires to make. Go make it now. You wont be disappointed.

Ingredients:

2 (8 ounce) packages of fat free cream cheese, softened

3/4 package of ranch dressing mix

2 cups shredded Mozzarella Cheese

1 1/2 cups chopped almonds or pecans

Directions:

In a medium size bowl, mash the cream cheese. Mix the dressing mix and the Mozzarella into the cream cheese (I mixed mine with beaters for about 2 minutes).  Shape the mixture into a ball. Roll the ball in the chopped nuts. Refrigerate covered (at least an hour) until ready to serve.

Every winter I go into a soup craze where I just want soup all the time. Zupas Chicken Tortilla Soup is one of my absolute favorites and after making nearly 10 different recipes I combined a few different recipes to make this one, which is the first one that I actually like just as much.

Ingredients:

1 Tablespoon extra virgin olive oil
2 chicken breasts, cubed
2 14.5-oz cans of chicken broth
1 tsp cumin
1 11-oz can of corn with red and green bell peppers
1 10-oz can of black beans
1 10-oz can of green enchilada sauce
1 cup salsa
1 Tablespoon chopped cilantro
2 Tablespoons lime juice
1/2 cup fiesta blend cheese

Directions:

In a large sauce pan, cook the chicken and olive oil on medium heat until it is browned. Add the broth and cumin, stir in corn, enchilada sauce, salsa, cilantro, and lime juice. Add cheese right before serving.

Top with extra cheese, sour cream, avocados and tortilla strips.

Even though the holiday season has come to an end I couldn’t help myself from not sharing this recipe. I made this for a few friends and it was a huge hit, these muddy buddies are seriously so delicious and extremely addicting. They are great for a party or just a snack to have around the house, and it will leave everyone coming back for more.

Ingredients

  • 5 cups rice Chex cereal
  • 2 boxes Andes mints (4.67 ounces each)
  • 1 1/2 cups powdered sugar
  • 4 teaspoons sprinkles (optional)

Instructions

  1. Add the powdered sugar and sprinkles to a plastic bag and mix together.
  2. Put the Chex cereal in a large bowl.
  3. Melt the Andes in a microwave bowl for 1 minute and stir until smooth. If not melted, microwave for additional 15 second increments until melted and smooth.
  4. Pour the melted Andes over the Chex cereal and mix until the cereal is coated. Act quick because the Andes dries fast. Add the cereal to the plastic bag with the powdered sugar mixture and shake until the cereal is completely covered.

Spinach Artichoke Dip

I am sure many of you have had some form of spinach artichoke dip. It is seriously so good, however we rarely make it, or allow ourselves to have it. The dip always seems to go over well with crowds though so we decided it must be served at our Gatsby party (which will be posted on the blog tomorrow). This recipe is so easy with its four steps and causes very little stress. Please go make it now.
